Potato dumplings served with basil and grape sauce

400 g red beetroots
150 ml concentrated red beetroot juice
200 g cooking vegetables (2 carrots, 1 parsnip, a small piece of celeriac, and 5-7 cm leek)
3 cloves garlic
Blend the cream, basil leaves, garlic and salt together. Next, bring to a boil over slow heat and reduce by 1/5. Then, cut the grapes into small pieces and add to the sauce. Top the sauce over cooked potato dumplings.
